1/4 cup Cannabis Olive Oil (or similar cannabis oil)
1 lb beef roast cut into 1 inch chunks (can also use stew meat)
1 lb pork roast cut into 1 inch chunks (can also use other cuts of pork)
2 cans Ortega WHOLE green chili’s- cut into smalll pieces
4 cloves garlic pealed and chopped
1 medium onion cut in large pieces
1 tsp salt
1 tsp pepper
1 tsp ground red pepper flakes
1/2 cup flour
1 cup shredded jack cheese
1Put flour in a paper or plastic bag
2Add the meat chunks and shake until the pieces are lightly covered in flour.
3In a large cooking pot (or cast iron pot) heat the cannabis oil.
4Add chopped garlic to pot once the oil is hot.
5Remove the chunks of meat from the bag of flour (let excess flour shake off), and place in pot.
6Add the onion , salt, pepper, and the red pepper flakes.
7Lightly stir and turn the meat until the pieces are lightly browned on all sides.
8Add 6 cups warm water and bring to boil. Reduce heat to simmer and cook for 3 hours, stirring occasionally.
9When the meat begins to fall apart easily, add the green chili’s and let cook another 30 minutes.
10Optional- Top with grated Jack cheese before serving.
11I also serve warm tortillas drizzled with cannabis butter alongside this dish!
